Miracles really do happen!! Today we had record high temperatures---67 degrees! Can you believe it? It was so wonderful. I actually got really hot when I was outside in just a thin jacket. Maia and I tried to make the most of it....we went on a REALLY long walk this morning and then played out on our back porch until it was nap time. Then it was really traumatic to try to get her to come inside--that girl absolutely LOVES being outside. There were many tears involved and even some mini-tantrums, but she recovered, thankfully.
On another note, I haven't posted a recipe on my blog for a long time, so I decided I better get back with it!! This recipe comes from Martha Stewart's website--my sister and her husband cooked them for us when we were in Texas and they were so delicious (I had never even tried parsnips before or even knew what they were really for actually). I cooked them up again the other day and they once again tasted super good, so they are highly recommended! Let me know what you think.
Maple Glazed Parsnips and Carrots
Ingredients:
Serves 4 to 6 .
- 1 1/4 pounds (about 6) parsnips, peeled, halved lengthwise
- 3/4 pound thin carrots, (about 12), peeled, greens trimmed but not removed (I removed the greens when I cooked them)
- 4 slices bacon, each cut into 4 pieces (we used turkey bacon for this, just for a little FYI)
- 10 sprigs fresh thyme (you can also use rosemary)
- 1/4 cup pure maple syrup
- Coarse salt and freshly ground pepper
Directions:
- Preheat oven to 450 degrees, with rack in lower third. Place parsnips, carrots, bacon, and thyme in a single layer on a rimmed baking sheet.
- Drizzle with syrup; season with salt and pepper. Toss well to combine.
- Bake until bottoms of vegetables begin to caramelize and turn dark brown, about 20 minutes. Remove from oven, and toss vegetables carefully. Return to oven, and bake until all sides are well browned, about 25 minutes more. Discard bacon and thyme. Serve immediately.

67 degrees??? That is not even fair! Are you sure this wasn't just a dream, Crescent? I think it was in the low 20's here today. TOO COLD!

Luke was so Loving it too! He was carrying around the shovel and having a ball playing in the toy house.
Then look at it out there today! YUCK! I woke up in the middle of the night thinking our house wasn't going to hold up to that wind! I was thinking it was a tornado! Scary!

Oh dear Maia is so big!! How do you like buffalo... it has been so cold there!! I hope you guys are doing well and loving it there!! It feels like just last week we went visiting teaching together!! Crazy!
Yeah, I agree with the other comments that it probably won't last. :) We had weather in the high 50s for 2 days, and now we're down in the 20s or so with snow on the ground. Sigh. Sorry to hear that we weren't the only ones with travel disasters, but at least we're not alone in them, right?
I've been peeking at your blog also. I love seeing all the cute pictures of Maia! We miss you guys so much in the ward. This will be a fun way to stay in touch.
